“Food tip” del giorno – Mushrooms!

by valentinalucia

Mushrooms are chock full of antioxidants and are a decent source of vitamin D, but there’s a little trick to increase the amount of vitamin D in a mushroom – place mushrooms under a sunny windowsill or under a UV light bulb. Theses sources of light provide a boost of vitamin D to the mushroom, so let mushrooms bask in the light rays for a few hours, then cook as usual.

According to Monica Reinagel, the host of the Nutrition Diva podcast, this method is so effective it could even help reverse vitamin D deficiencies. Check out her podcast episode on Mushrooms to learn more.
