Ginger comes in many forms – fresh, dried, pickled, preserved, crystallized, and ground. Make sure you know what form you need when cooking, because the properties of each form are unique; mature, fresh ginger root has skin that must be removed before getting to the fibrous flesh, pickled ginger must be kept in the refrigerator to preserve freshness, and ground ginger is primarily use in baking and curry dishes.
