The larger the zucchini, the more water it will have in it. Zucchini is best cooked fast and with as little water added as possible. To drain, cut the zucchini into slices, sprinkle with course salt and let drain for 20 to 30 minutes. Rinse with cold water, pat dry, and prepare as desired!
