You have to be very mindful when cooking oysters – cook them gently to avoid turning them into a rubbery mess. Once the edges begin to curl, you’ll know the oysters are cooked and should be removed from heat.
I haven’t had as may oysters in my lifetime as I would like, but I’m always willing to try something new with seafood. This recipe from Serious Eats from Alton Brown (one of my favorite culinary experts!) for Baked Oysters with Artichoke and Panko Crumbs takes a different spin on cooking oysters, not to mention keeping things simple, yet full of flavor.
