Use natural almonds when baking and cooking. Dry-roasted almonds are great for snacking because they are slightly harder, due to the removal of moisture from the roasting process, and have a deeper flavor. Dry-roasted almonds also have a shorter shelf life than natural almonds.
Almonds can also be ground into flour! Check out this recipe for Almond Chocolate Cake from Pham Fatale – it uses almond flour instead of regular flour to give the cake an extra hint of nutty, rich flavor.
